Getting to a place where I now routinely eat more whole plant-based foods truly was a journey. And that journey began back in 2019. It was not only my journey, but my husbands as well. We were newly married in 2017 and trying to figure out what meals would look like for us. Started out with us each cooking up meals that we grew up with and were comfortable making. We would try new recipes from cookbooks that were gifted to us or look up recipes on Pinterest. At this time, we were never confined with what we could eat (and we ate everything). We did this for a while but noticed we would not always feel the best immediately or even days after eating some of these meals.
That’s when we started to question what we were eating and if it was really what was best for us. We stumbled across some documentaries and books that started to answer those questions for us and change our perspective on what we ate and why. Like I mentioned, our progression was a journey. We labeled our eating from pescatarian to vegetarian to vegan. Now we are just focusing on living a lifestyle where we eat as many whole and plant-based foods as possible. We have found that eating this way makes us feel and look our best!
And now that brings us to Viva La Root (VLR)! My mission with this blog is to foster an environment where whole food plant-based eating is less intimidating and more convenient for everyone! Now I am no professional chef or dietician, I am just a person that cooks every day trying to navigate this whole food plant-based eating thing. I have learned so much and will continue to learn more and share what I can with you all! Welcome
